Try our delicious Sweet Potato, Red Lentil & Chick Pea Curry
Our sweet potato curry with red lentils and chick peas is a favourite of our chefs at the Wheatsheaf. Can't get out to us? Why not give it a whirl for yourself!
Serves 3-4 people
Ingredients
Spices
- ½ tea spoon ground ginger
- ½ teaspoon fenugreek seeds
- 1 teaspoon cumin powder
- 2 teaspoon curry powder
Main ingredients
- Tomato paste x 2 table spoons
- Salted butter x 125g
- 1 x diced brown onion
- 2 x sweet potatoes (diced thumb size)
- Chopped tomatoes 2 x small tins
- Lentils x 120g
- Chick peas x 1 small tin
- Veg stock ½ pint
- Fresh coriander x 1 small bunch
Method
- Sweat down the onions, butter, fenugreek seeds & sweet potato until lightly caramelised
- Add the lentils & cook for a further 2 minutes
- Add the tomato paste & spices. Cook out for 3-4 minutes
- Add the chopped tomatoes & vegetable stock. Simmer until the sauce has thickened
- Add the chick peas
- Season with lemon juice, salt, pepper & a pinch of sugar
- Finish with chopped coriander
