Sweet Potato, Red Lentil & Chick Pea Curry

Serves 3-4 people

Ingredients  

Spices

  • ½  tea spoon ground ginger
  • ½  teaspoon fenugreek seeds
  • 1 teaspoon cumin powder
  • 2 teaspoon curry powder

Main ingredients  

  • Tomato paste x 2 table spoons
  • Salted butter x 125g
  • 1 x diced brown onion
  • 2 x sweet potatoes (diced thumb size)
  • Chopped tomatoes 2 x small tins
  • Lentils x 120g
  • Chick peas x 1 small tin
  • Veg stock ½ pint
  • Fresh coriander x 1 small bunch 

Method 

  1. Sweat down the onions, butter, fenugreek seeds & sweet potato until lightly caramelised 
  2. Add the lentils & cook for a further 2 minutes 
  3. Add the tomato paste & spices. Cook out for 3-4 minutes 
  4. Add the chopped tomatoes & vegetable stock. Simmer until the sauce has thickened 
  5. Add the chick peas
  6. Season with lemon juice, salt, pepper & a pinch of sugar
  7. Finish with chopped coriander
